The young Thierry Pillot has turned this domaine not only into one of the greats of Chassagne, but one of the very top domaines in the whole of the Côte d'Or. His skill and enthusiasm coupled with truly fabulous vineyard holdings (which include Caillerets, La Romanee and Grande Ruchottes) make a formidable combination. Thierry favours wines of tension and transparency, he achieves this through not picking too late and reducing the influence of oak in the ageing process. The wines are rarely matured in more than 10% new oak and he uses a mixture of barrique and larger demi-muids barrels.

Bourgogne Chardonnay

A contender for the finest Bourgogne Blanc. It comes from a very well situated, 0.6-hectare parcel on a northeast-facing hillside just south of Chassagne. The vines here are now 35 years old. It's racy and layered. Expect a spicy, crystal-pure white Burgundy with lovely cut, thrust and a crunchy, pithy grapefruit-scented personality together with a lovely dollop of lemon curd richness at the core. It gets better and better with air, always a good sign with a young white Burgundy.

Even though its a village wine it rivals a Premier Cru in finesse and complexity especially at a younger age. Not surprising since the vineyard is situated just below the Premier Cru vineyard Les Champs Gains.

“Clear pale colour with a fresh, cool, zesty nose that shows elegance while the palate delivers the flesh, even some sucrosity. This wine is suitable for drinking early though it has the ability to also age.

A vague whiff of exotic fruit is present on the slightly riper aromas of pear and apple compote, white flower and a hint of lychee. Chassagne Montrachet Premier Cru La Romanee Blanc

Many compare this vineyard to Meursault Perrieres and even Corton Charlemagne. It delivers exceptional opulence despite its high location.

Rated at the highest level by Jasper Morris with 5 stars. Very old vines here, Thierry’s favourite especially for ageing. The colour is pale and the bouquet backward but clearly hiding concentration. There is a density here over and above all the others. No deeper in alcohol but this is powerful stuff which will develop greater elegance as time goes by. I see why this is Thierry’s favourite!
